About Miguel:

I started my career in hospitality at a very young age in my family’s restaurant. There I started to look for a progression in the management of the hospitality business. While studying Restaurant Manager Diploma at the CdT Valencia back in 2000 I felt in love with wine and at that point onwards I have tried to keep myself updated and well educated in this fascinating world of wine.

I discovered a different hospitality when I moved to London in 2009 and for the next 7 years I was working in places like The Ritz, The Dorchester or Hakkasan where I found prestige hospitality, and prestige wines.

I am actually holding the Spanish Wine Scholar and the WSET level 3 in Wine, Spirits and Sake. I am an Advance Sake Sommelier by SSA, Sake and Shochu advisor by the JSS and Kikisakeshi by the SSI. I also developed my career in Whisky, and I have a Diploma in Single Malt Whisky, Certified Scotch Whisky, Certified Irish Whiskey and Certified in Gin by the EWA… My next steps will be to specialize in Sherry wines (I am also a Certified Brandy de Jerez educator), Rioja wines and Cava. The Diploma WSET and IWS will be a medium-term objective.

The FWS is by far the most comprehensive and in-depth training I found about the whole of French Wines as a general topic. I discovered new regions, styles, and laws… I also rediscovered and went more inside other regions I thought I had mastered, but I was far from my thoughts… Very enjoyable and well documented course. One of my favorites.
