About Stephen:

The French Wine Scholar program was an excellent step in my educational path. It took what I learned of French wine in the Society of Wine Educator's Specialist of Wine program and expanded it to a higher level.

I am a Sommelier with the Ritz Carlton at Half Moon Bay. I am responsible for providing exceptional wine service for guests, and also to educate guests on wine tasting (such as the differences of aroma {blackberry, cherry, grapefruit etc} and structure descriptors {acid, tannin, alcohol, weight}), wine regions they may be unfamiliar with, and to introduce guests to new wines (a guest came in recently who had just dropped $700 on only dessert wine on a recent trip to the Napa Valley. Sweet wines were his favorite, but he had never head of or tasted Sauternes. I was very pleased to introduce him to it, as well as other dessert wine styles he was unfamiliar with such as Madeira, Rancio Rivesaltes and Maury.)


While I do love a good Tuscan with Bolognese, and recognize that Californian wines often achieve greatness (a recent taste of a 2003 Quintessa would win anyone over), my heart and palate lies with French wines. The history is so rich, I especially enjoyed learning of the Bordeaux "golden ages" in the FWS program, and just how important being a wine producer in a location with easy access to mercantile trade is (poor Southwest and Languedoc/Roussion producers! Bordeaux producers a really put the squeeze on them!). It's fascinating that France is responsible for all of the new world's major grape varieties, and to compare a French version to a new world version. I had a guest come in who was new to wine but curious to learn. She thought that Cab Sauv and Merlot were very different grapes, but I argued that they are similar and that region will make more of a difference. I poured her a Sonoma merlot, a Napa cab, and a st emilion grand cru to taste. Sure enough, she agreed that the merlot and cab were very similar and that the st emilion was most different. I explained that here in CA, our wines are riper with heavier levels of extract than in Bordeaux. Sure enough, both the ca wines here a darker color and heavier in structure than the Bordeaux. The terroir, and also what the CA palate/market demands, has more influence on the wine than Cab vs Merlot, yet I hear all the time from guests "I love Cab but I'd rarely drink a merlot"! I love to introduce guests not only to new wines, but new philosophies, new systems of thought regarding wine that studying France can give an American.

The study guide is an authoritative reference on French wine, full of detailed information and communicative visuals. While at work, I use the guide on a weekly basis to show my guests a map of Bordeaux, a botrytised grape cluster, or the galets of Chateauneuf-du-Pape. Having these visuals on hand is an invaluable educational and sales tool.
